Henry Sibley's Cafeteria Embraces Healthy Helpings
Fresh vegetables and whole grains are new favorites in the Warriors' cafeteria.
April Valete definitely notices improvements in the daily lunch line at Henry Sibley High School in Mendota Heights. "In the past, it seemed like I was eating greasy pizza every day, but there are so many more healthy things and a better variety to choose from now," says Valete, a senior. Case in point: pasta bar on Tuesdays. "When the bell rings for lunch, you should see how fast kids get in line," she said with a laugh. Jeff Wolfer, District 197's child nutrition director, agrees the pasta bar is a big success, both in terms of pleasing kids and giving them a nutritional boost.
