BC2 Bakery Will Soon Have Its 'Heart'

The hotly anticipated business is still under construction.

The work of transforming a slice of into Bread, Coffee and Cake Bakery and Bistro will continue for at least another month, according to the owner.

"BC2" is reopening in Mendota Heights after a falling boulder destroyed the former location on Wabasha in April of 2011.

It will occupy a portion of the space .

 Owner Robert Dubuc said last week that they are now working on installing the oven. The custom-made oven, which Dubuc called "the heart of the building" was dissasembled from the former location and is being put back together in the new space.

The work is time-consuming but going well, he said. And while he doesn't want to set a hard date for the grand opening—"I don't want to jinx it"—he said, the doors could open by the end of August.
